Ingredients
- 2 tsp Pimp My Braai Tuscan Italian Garlic, Tomato & Herb spice
- 2 large Chicken breasts or 4 thigh fillets
- 2 tbsp Olive oil
- 1 onion diced
- 3 cloves garlic minced
- 1 400g tin chopped tomatoes
- 1.2 litre chicken stock
- 150 g Orzo pasta
- 150 g Cavolo nero or kale roughly chopped
- 50 g Parmesan finely grated (plus extra to serve)
- Crusty bread to serve
Instructions
- Coat chicken in Pimp My Braai Tuscan Italian Garlic, Tomato & Herb spice - the spice liquifies immediately on the surface. Heat olive oil in a large pot and sear chicken over a high heat for 3 minutes per side until golden. Remove, shred roughly with two forks and set aside.
- In the same pot, soften onion 5 minutes, add garlic and cook 1 minute until fragrant. Add chopped tomatoes and simmer 3 minutes, scraping up any caramelised bits from the base of the pot.
- Pour in chicken stock and bring to a boil. Add orzo and cook 8 minutes, stirring occasionally to prevent sticking. Add cavil Nero and cook 3 minutes more until tender.
- Stir shredded chicken and parmesan back through - the orzo will thicken the soup beautifully as it absorbs the stock. Season generously and serve in deep bowls with extra parmesan and crusty bread.
